Chocolate Chip Cheese Ball

This is one of my favorites and always makes me think of Christmas. I am not a huge fan of cheese balls so if I am required to bring one I always like to see if I can bring a sweet cheese ball and surprise the guest!

1 pkg of cream cheese softened
1/2 cup of butter softened (real butter not margarine)
1 cup of confectioners sugar
3 tbl spoons of brown sugar
1/2 teaspoon of vanilla extract
1 cup of mini chocolate chips
3/4 cups of pecans

Mix in a bowl with a beater the cream cheese and butter until smooth. Mix in sugar, brown sugar, vanilla and chocolate chips until thoroughly mixed together. Roll into a ball and place in the middle of saran wrap and completely cover. Refrigerate 2+ hours. Crush pecans and place on a plate. Roll the ball in the pecans to completely cover the ball. Place in the middle of a serving dish with gram cracker sticks and enjoy!

*I like to shape mine once in the saran wrap and refrigerate overnight.

Bacon Cheese Dip

This is a recipe from one of my friend's and from what I hear it is delish... Seems pretty easy to be such an elegant dip!

1 lb unsliced Italian round loaf bread
2 cups of shredded monterey jack cheese
1 cup of parmesan cheese
1 cup of mayo
1/4 cup of chopped green onions
6 slices of cooked bacon

Cut the top off of the loaf of bread and hallow out the middle careful to not go all the way through the bottom. (You will cut approx. 1/4 of the top off.) You only need to cut out a cereal bowl size. Mix in a separate bowl the cheeses, mayo, green onions and cooked bacon until thoroughly mixed. Place in the middle of the hallowed out bread and cover with the top of bread. Bake at 350 for approx 45 mins. Serve immediately.

Swiss Chicken

4-6 boneless chicken breast
4-6 slices of swiss cheese (you need one slice of cheese for every piece of chicken)
1 can of cream of chicken soup
1/4 cup of milk
1 roll of ritz crackers crushed
1/4 stick of butter

Place chicken breast in the bottom of a greased baking pan. Place the slices of swiss cheese on top of the chicken. Mix in a separate bowl the soup and milk. Pour the soup mixture over the chicken and cheese. Mix the crackers and butter in a separate dish and spoon the crackers over the tops of the chicken and cheese to form a crust. Bake at 350 for 45-60 mins and enjoy!

*I like to cook green beans or another green vegetable with this meal!

Hash Brown Casserole

2 pkgs of diced or sliced frozen hash browns (I'm a southern gal so I like ‘em diced!)
1 can of cream of mushroom soup
¼ cup of milk
1 cup of shredded cheese

Place the thawed hash browns in a greased casserole dish and mix in the soup and milk. Cover with cheese and bake at 350 for 30-45 mins. Enjoy!

*Some people like to add onion, peppers and even meats to this casserole. I am Plain Jane so I like it as is!

Sausage Gravy-N-Biscuits

1 lb of ground sausage
¼ cup of chopped onion
1 teaspoon of garlic powder
2 tbl spoons of all-purpose flour
1 cup of milk-as needed
salt and pepper-to taste

In a large skillet over medium high heat, combine the sausage and onion and saute for 5 to 10 minutes, or until sausage is browned. Season with garlic powder, salt and pepper to taste. Add enough flour to just make the meat somewhat sticky. Then stir in milk until mixture is to desired consistency. Allow to heat thoroughly and serve over biscuits. You will need to have biscuits baking while making the gravy. While my gravy is homemade my biscuits are not…Sorry!

Monkey Bread

1 pkg of frozen yeast dinner rolls (that would have to sit out to rise)
1 pkg of vanilla pudding (NOT instant)
1 cup of brown sugar
1 stick of butter
1 cup of nuts of your choice

Place chopped nuts in the bottom of a greased bundt pan. Then place frozen dinner rolls in the bundt pan. Pour pudding mix over the dinner rolls. In a sauce pan over med heat mix butter and brown sugar until caramelized. Pour mixture over dinner rolls. Cover with a hand towel and let sit overnight. Bake at 350 for 30 mins. Empty pan by placing it upside down on a plate and enjoy.

*Some people also add raisins when adding the nuts and some also make a cream cheese icing to place in the middle of the bread to dip if needed. I do not think it needs either and those are just extras.

French Toast or French Toast Casserole

8-10 slices of white loaf bread
8-10 eggs
½ cup of milk
2 tea spoons of cinnamon
1 tbl spoon of vanilla extract
Pam non-stick cooking spray

Mix all ingredients together, excluding bread, in a large bowl until blended but not bubbling. Spray frying pan with Pam and dip 1 slice of bread into egg mixture covering both sides. Immediately place into pan and brown on both sides over med to high heat. Continue with all of bread. Place cooked French toast on a cookie sheet and bake in oven for 5 mins at 200 just to heat. Top with syrup of your choice!

*I place each slice in oven as I finish just to keep warm. Some people also top with confectioners sugar but that is too messy for me and my bunch.

**You can also turn this into a casserole by tearing the bread into 2 inch pieces and placing in a buttered dish. (You might need to use a little more bread for this to be a casserole.) You would then pour the egg mixture over the bread. Bake at 350 for 30-45 mins. It does better if you refrigerate overnight. You would then spoon out what you would like and pour syrup and enjoy! I use more cinnamon and vanilla if making the casserole by 1 teaspoon.

Breakfast Pizza

All kids will love this!

1 pkg of crescent rolls – refrigerated
1 lb of ground sausage
1 cup of frozen hash brown potatoes – thawed
1 cup of shredded cheese
3 eggs
¼ cup of milk
¼ teaspoon of pepper

Unroll crescent rolls and place on a pizza stone. Press the rolls together to form a pizza crust. Brown the sausage over med to high heat and drain. Sprinkle sausage and hash browns over the crust. In a bowl mix eggs, milk and cheese and pour over crust. Bake at 375 for 30 mins.

*Some people will add peppers and/or salsa to their pizza but Plain Jane over here would prefer not! You can also sprinkle the top with mozzarella cheese or parmesan cheese.

Breakfast Casserole

1 loaf of white bread
1 dozen eggs
1 lb of Jimmy Dean ground sausage
1-2 cups of shredded cheese
½ cup of milk
salt-n-pepper to taste

Tear about ½ pkg of white bread into about 2 inch pieces and place in greased casserole dish. Brown ground sausage and drain. Pour sausage over bread. Mix eggs, milk and salt-n-pepper together in a bowl and pour over sausage. Top with cheese. Bake at 350 for 30-45 mins.

*Some people also put crumbled bacon on top with cheese. It is also best for the casserole to sit overnight and bake in the morning.

Just Getting Started

I have created this blog to share some of my families and friends best recipes with you all! I think my grandmother, Nonnie, was the best cook ever and she taught my mom everything she knows and my mom is now teaching me. My sister lives in Salt Lake City and is originally from Hawaii so she has never heard of most of these things! I hope she tries these foods and feeds them to my nephews and niece!
