Crunchy Chicken Casserole

This is for my sister! It is very similar to the Chicken Spaghetti but you can eat this with rice instead and I know y'all have to have your daily intake of rice :)

1 bag of Fritos chips
6 chicken breasts
1 can of rotel tomatoes
1 can of cream of chicken soup
1 can of cream of mushroom soup *I just use 2 cans of cream of chicken
3 cups of shredded cheese

Cook chicken breasts. Layer chips in the bottom of a casserole dish (just to fully cover the bottom). In a large bowl mix together shredded chicken, tomatoes and soups and then pour over the chips. Pour cheese over the chicken mixture and bake at 300 for 20 mins. Serve over rice and enjoy :)

Chicken Spaghetti

My favorite Chicken Spaghetti EVER!!!

4 chicken breast
1 pkg of spaghetti noodles
1 can of rotel tomatoes
3/4 pkg of velveta cheese

Cook chicken and noodles. Drain noodles and shread chicken. In a large bowl mix together all ingredients and place into a casserole dish. At this point the cheese will not be melted. Bake at 350 for 30-45 mins. Halfway through cooking remove the spaghetti and stir to mix the cheese and continue to cook.

Cheesy Chicken and Broccoli

4 cooked chicken breast
1 bag of instant rice
1 bag frozen broccoli heads
1 can of cream of broccoli soup
1/3 cup milk
1/2 cup shredded cheddar cheese
1/2 sleeve of Ritz crackers

While rice and broccoli are cooking cut chicken into squares. Drain rice and broccoli and mix all ingredients thoroughly, minus Ritz crackers in a large bowl. Place mixture in a greased casserole dish. Crumble the Ritz crackers and place on top of mixture. Bake at 350 for 30-45 mins and enjoy :)

Pizza Casserole

Yummy and super easy!

1 pound ground beef
1 pkg egg noodles
1 tsp garlic
1 cup pepperoni
1 jar (16 ounces) pizza sauce
4 tablespoons milk
2 cup shredded mozzarella cheese

Brown ground beef and drain and cook noodles until tender and drain. In a large bowl mix all ingredients together minus 1/2 cup of mozzarella cheese. Place mixture into a casserole dish and cover with 1/2 cup of mozzarella cheese and bake at 350 for 20 mins. Enjoy :)

Fruit Pizza

This is a kid favorite that I saw this in a Southern Home and Garden Magazine. I have not made it for my little one yet but will be soon as it warms up :)

1 roll of sugar cookie dough
1 large pkg of whipped cream
1 pkg of fresh strawberries
1 pkg of fresh blueberries
1 pkg of fresh kiwi

Roll the cookie dough onto a pizza pan and bake as directed on package. Let cool. Cover entire cookie with whipped cream. Slice strawberries and kiwi and place over whipped topping along with blueberries. Enjoy :)

*You can, of course, substitute any fruits.

Broccoli Cheese Soup

Sorry for the delay in adding more delicious foods... You know you are southern when you could eat three bowls of nothing but broccoli and cheese :)

2 (10 oz) packages frozen broccoli heads
4 cups milk
5 cups shredded cheese
2/3 cup all purpose flour
3 cups heavy whipping cream
2 cubes chicken bouillon
1 teaspoon salt
1 teaspoon ground black pepper

Cook and drain broccoli. While broccoli is cooking mix all other ingredients into a large pot and bring to a simmer. Make sure all cheese has melted. Once broccoli has been drained add broccoli and stir to mix well. You might need to add a small amount of water to keep the cheese from sticking. Enjoy :)

*I add the cheese in one cup at a time to give it time to melt.

Chocolate Chip Cheese Ball

This is one of my favorites and always makes me think of Christmas. I am not a huge fan of cheese balls so if I am required to bring one I always like to see if I can bring a sweet cheese ball and surprise the guest!

1 pkg of cream cheese softened
1/2 cup of butter softened (real butter not margarine)
1 cup of confectioners sugar
3 tbl spoons of brown sugar
1/2 teaspoon of vanilla extract
1 cup of mini chocolate chips
3/4 cups of pecans

Mix in a bowl with a beater the cream cheese and butter until smooth. Mix in sugar, brown sugar, vanilla and chocolate chips until thoroughly mixed together. Roll into a ball and place in the middle of saran wrap and completely cover. Refrigerate 2+ hours. Crush pecans and place on a plate. Roll the ball in the pecans to completely cover the ball. Place in the middle of a serving dish with gram cracker sticks and enjoy!

*I like to shape mine once in the saran wrap and refrigerate overnight.
